A Cleaner Dough. Same Flavors.

At Hillos, we’re always aiming for cleaner, more honest ingredients. Today, we’re making a real change to our dough.

We’re switching to non-gmo unbleached hard red wheat flour. Our old Northern Mexican (Selecta®) flour used bleaching agent, along with some dough conditioners and natural additives. It worked, but it wasn’t the ingredient list we wanted to support. The new flour doesn’t have any of that. No bleaching agents, no additives, just clean, natural grain simply milled.

This is part of a bigger journey. We’ve moved from vegetable shortening to Non-GMO expeller-pressed palm oil, and from an egg wash to a simple sugar-based wash. And our fillings, are sweetened with real cane sugar — nothing artificial. The whole pastry is built on real and wholesome ingredients, and this flour brings us one step closer to making that true everywhere.
