Hillos is not gluten-free. The dough is made with wheat flour and is not suitable for those with gluten sensitivities or celiac disease.
Guava, Piloncillo, and Fig are vegan. Dulce de Leche contains dairy and is the only non-vegan flavor in the lineup.

Each package has an expiration date printed on the packaging. Our bags include a reseal mechanism to help keep them fresh longer and as long as they are refrigerated or frozen.
Hillos does not need to be refrigerated before opening. Store in a cool dry place until you are ready to enjoy. Once opened, use the reseal mechanism on the bag and refrigerate or freeze within 2 days of opening for best freshness.

Hillos is the first brand to bring this category to life, inspired by the coyota, a traditional pastry from Sonora, México, made with real ingredients you can actually recognize.
A coyota is a traditional pastry from Sonora, México and what makes it a coyota is very specific. It’s round, baked in a wood-fired oven, never gas or electric. The crust is heavily textured, dry and light, like a pizza crust, and it’s the main character. The filling is light, almost secondary. It’s made with Sonoran wheat, grown in the same region, and like tequila which must come from Jalisco, a real coyota has to come from Sonora. Most people who know coyotas either visited Sonora themselves or received them as a gift from someone who did. They travel as a memory, not a product.

Hillos is a tribute to Hermosillo, the capital of Sonora, México, and the city most closely associated with the coyota pastry. Locals shorten Hermosillo to “Illos” and since the H is silent in Spanish, Hillos and Illos sound identical.
Pop-Tarts use industrial ingredients and a flavor library that hasn’t changed in decades. Hillos uses real ingredients and Latino flavors like guava, dulce de leche, piloncillo, and fig that don’t exist anywhere in the toaster pastry category. Yes. Hillos is Latino-owned. Juan is a 1st-generation Mexican-American founder whose mother is from Sonora, Mexico, the same region the brand draws its heritage from, and whose father is from Jalisco, México. Sweet Latino flavors are not a trend for him, they are home.
Orders are made in small batches so please allow up to 2 weeks for your order to be prepared. Once shipped, delivery typically takes 5 to 7 business days to your door via USPS. You will receive an email notification with tracking information as soon as your order is on its way. All orders are insured up to $50.
Yes, Hillos ships internationally to Europe. We do not currently ship to Canada or Mexico. For international orders please allow additional time for delivery beyond our standard 5 to 7 business day estimate.
