Our residency at Smorgasburg LA was an incredible live testing ground. It allowed us to share the flavors of Sonora with thousands of fans, test Coyotas in real time, and gather insights that are now shaping our new strategy. Seeing people’s reactions, hearing their stories, and experimenting with different points of the experience gave us invaluable lessons for what comes next.
To take Hillos to a larger audience and build a sustainable business, joining an accelerator program has become a necessary step. It provides the guidance, resources, and structure needed to scale thoughtfully, assemble a strong founding team, and navigate the funding phases—without relying on a brick-and-mortar model.
This path allows us to focus on strategy, distribution, brand development, and the commercialization of Hillos pastries. It also gives us the space to build a product roadmap, introduce new and unique flavors, and develop a supply chain capable of supporting the distinct flavors we plan to bring to market.
Like many startups, this process will take time. But Hillos is ready for it. We’re committed to honoring the tradition of the coyota while innovating for today’s consumer. The next chapter is about growth, partnerships, and building a business that can share a piece of Sonora with as many people as possible. But until then, we are still making Hillos by hand, with care and love.
